It's been a little over a year since chef Jonah Miller and Nate Adler opened Huertas, their Basque restaurant in the East Village. When they did, both were just in their mid-20s, but with many years each of experience in some of New York's top restaurants - most recently, for both, in Danny Meyer's empire.
